White Sturgeon
Caviar
Chef Thierry Rautureau uses the White Sturgeon Caviar daily in many of
the plates he prepares at Rover’s Restaurant. You might find it on his Scrambled
Egg, on in a Maine Lobster Salad or you just may find him sampling it as
part of the daily delivery of fresh ingredients.
White Sturgeon Caviar is beautiful. The beads can range from dark gray to
olive tones with a mild nutty flavor. It is very similar to the species Osetra
from the Caspian Sea. Indigenous to the waters and rivers of the Pacific
Coast of North America, the White Sturgeon is one of the oldest creatures
found on earth!
In the nineteenth century, Wild White Sturgeon stocks supplied the world
with Caviar. Unfortunately, the resource was all but depleted. Thankfully,
White Sturgeon is being farmed in Northern California, and the delicious
Caviar is a product of aquaculture.
